Ingredients
4 bone-in-pork chops
4 small sweet potatoes, cut into wedges
2 Tb. olive oil
1 Tb. maple syrup
2 scallions, chopped
Salt and pepper to taste
Directions
Heat grill to medium-high. Season the pork chops with 1/4 tsp. salt and 1/4 tsp. pepper. Grill to the desired doneness, 7-8 minutes per side for medium.
Meanwhile, in a bowl, toss the potatoes with 1 Tb. of the oil and 1/4 tsp. each salt and pepper. Grill, turning often, until tender and slightly charred, 10-12 minutes. Reserve the bowl.
To the bowl, add the maple syrup, scallions, the remaining oil, and 1/4 tsp. each salt and pepper. Add the potatoes and toss to coat. Serve with the pork.
